Vegan Cheese is primarily made of cashews and is very easy to make. There is a wide variety of vegan cheese recipes available online, but I chose to share this one.
Ingredients:
200 g cashews
2 tbsp yeast flakes
2 garlic cloves
2/4 tsp Himalayan salt
1/4 tsp dry ginger powder
Directions:
Soak the cashews in water for at least 5-6 hours. Drain them and place in a food processor/blender/food slicer, whichever one you have available at home.
Add the yeast flakes and salt. Peel the garlic cloves – I recommend crushing them, the peel comes off easier and the essential oils are released. Cut the cloves in four pieces and add in your food processor. Then process the ingredients until the nuts develop the consistency of crumbs. Do not overdo it, otherwise you’ll end up with a mush – you are looking for a parmesan cheese-like crumbled structure. That’s it!
I was successful at my second attempt. At first go, my mistake was processing the ingredients for too long.
Remember: keep checking on the consistency!
