No-Bake Nut & Date Energy Balls.

Raw date-nut balls are the top dessert choice for raw vegans because they taste just like candy (bet but are not overly sweet)! They contain no added sugar or other sweeteners – the dates give the sweet taste. Children love them as well!

Ingredients:

2 cups organic cashew nuts
1 cup organic almonds
1 cup organic coconut flakes
3 tbsp. organic cocoa powder
20 pcs. organic dates
1 tbsp. organic vanilla extract
3 tbsp. water
a pinch of salt

Directions:

Put the cashews, almonds, dates and cocoa powder in a food processor and continue crushing them until all ingredients are equally processed. If the dates are very tender, the mixture will probably already become quite sticky (I used both firm and tender dates). Then add the coconut flakes (I used organic flakes because they are juicier – the oil extracted in during processing is needed in the hardening process). Continue shredding the ingredients, adding the vanilla extract, salt and water, if needed (I did). Continue mixing the ingredients until the mixture becomes unified and looks sort of like gingerbread dough.

Place the mixture on to a kitchen board and divide into smaller pieces. At this point you can let your imagination flow – either form them into balls, squares, rhombi, etc. Roll the pieces in coconut flakes or cocoa powder. Then, put them on a plate and place into the fridge for about an hour, then serve. Keep in the fridge!
