Gluten-Free Buckwheat Banana Dessert. Buckwheat is a grain naturally gluten-free. It can be safely eaten and enjoyed by anyone with celiac disease and gluten sensitivity. 

Buckwheat scores low to medium on the glycemic index (3). In other words, it should not cause unhealthy spikes in blood sugar levels. Green buckwheat is related to black buckwheat: its properties and uses are similar.

And now let me introduce you to delicious gluten free, plant based green buckwheat dessert.

Ingredients (per 2 servings):

100 g eco green buckwheat
180 g frozen banana
20 ml rice milk
1/2 tsp. stevia

Instructions:

The night before:
Leave the green buckwheat in a clay bowl full of water overnight (do not boil!). Peel and cut the banana into smaller pieces, freeze (anyway I recommend keeping fruit in your freezer for quick, easy and tasty ice-cream in case of unexpected quests).

The next morning:
Rinse the buckwheat, and add to a blender together with the frozen banana. Add stevia or other natural sweeteners, and blend away. And that is it! Serve in beautiful dessert bowls sprinkled with cinnamon, and decorate with shredded coconut or fresh berries. The taste resembles that of cottage cheese, only so much better!
