Date Walnut Pancakes – Oil Free, Sugar Free, Flour Free – these pancakes are a great and very healthy meal to serve the family on the weekends! Pancakes are also a great option before a gym workout!
These date walnut pancakes are such a great alternative to pancakes made from white flour (wheat)! And they are going to give you energy for the day!
So you are not gonna need many ingredients and that’s cool.
Ingredients:
160 g oatmeal
1 tbs baking powder
pinch of salt
60 g dates
200 g soy milk (i used Alpro sweetened)
50 g apple
70 g walnuts
For Chocolate Cream:
20 g cacao powder
1/2 tbs cinnamon
1 ripe banana
40 ml soy cream
Method:
Put the dates in a food processor and blend with soy milk until smooth paste. Add apple (without peel) and walnuts and continue to blend until well combined.
Place oats in a blender or food processor. Blend, or process, on high until oats resemble a fine powder. Add baking powder, salt and mix everything. After that mix wet and dry ingredients and combine well. Let it sit for at least 10 minutes while you make the chocolate cream.
Place a banana, cinnamon and cacao powder into a blender or food processor, add soy cream and mix until smooth. And the cream is ready to eat! If you would like more liquid cream, add more soy cream or soy milk.
Now heat a non-stick pan on medium.
(pour a few drops of oil if needed, I personally use good quality – non-stick pan so I don’t need an oil). Pour some large table spoons onto heated pan and cook until brown on both sides. Repeat until all mixture has been used.
Enjoy with chocolate cream!
